Baked Eggs and Mexican Hash

This dish began as a desire to make some baked eggs. I knew I had to add something else to the dish, so I turned to my refrigerator for inspiration. As soon as I peered in, I saw mango, and instantly, sweet potatoes, onion, peppers, and cayenne pepper popped into my head. I stopped by the grocery store to get everything, and came across some perfectly ripe avocados. My friend is the master at making low-fat “sour cream” with Greek yogurt, and I thought we’d fancy it up a bit with some avocado and lime to really knock this dish out of the water. The result is sweet potato hash with mango, red pepper, onion, and a bit of spice. On-top of it all, are baked eggs and an avocado-lime sour cream. Sounds too delicious, right? Try it out, and I’m sure you’ll fall in love.

Baked Ingredients (Serves 4):

6 Large Eggs

2 Large Sweet Potatoes

1 Mango

1 Red Pepper

1 Medium Sweet Onion

1 Tbsp Cayenne Pepper

2 Tbsp Olive Oil

Salt & Pepper to taste

Avocado-Lime Sour Cream

½ Cup Non-Fat Greek Yogurt

1 Avocado

Juice from ½ a Lime

Salt & Pepper to taste

Directions

Preheat oven to 375F

Chop sweet potatoes, mango, onion, and red pepper

Heat olive oil in an oven-proof skillet. Add chopped ingredients and let sauté for about 15 minutes, stirring occasionally.

Place skillet in oven and bake until potatoes are cooked through (about 15 minutes more).

Pull skillet out of the oven, and crack your eggs on top.

Place the skillet back into the oven and cook for about 12 minutes.

In the mean time, mix together “sour cream” ingredients in a small bowl using a fork.

Pull your skilled out of the oven, dole out “sour cream” on top, and serve!
