Arugula, Wild Rice & Apricot Salad from Good Things Grow

In the summertime, there really is nothing better to eat than a good fresh salad. With that in mind, we asked some of our favorite food bloggers to contribute their favorite salad recipes, which we will be sharing with you this week on the blog! To kick things off here is a mouth-watering recipe from Jacqui of the blog Good Things Grow.

Arugula & Wild Rice Salad with Apricots

Arugula, Wild Rice & Apricot Salad – Serves 4

I love a good salad, but I’ve never been one to be satisfied with a plate of iceberg doused in salad dressing. I’ve always approached salads as more of a way to get in all the veggies and fruits I love, while keeping the dressing light and the flavors interesting by adding nuts, grains, and or legumes.

I love the nutty flavor and chewy texture of wild rice, it adds a little heft to this salad, but doesn’t weigh you down. It pairs nicely with the slightly spicy flavor of the arugula and sweet tartness of the apricots. All wrapped up in a light dressing and tossed with creamy avocado and roasted almonds and I have a salad I could enjoy eating all year long.

Arugula & Wild Rice Salad with Apricots

Ingredients:

2/3 cups wild rice

1 bunch arugula

3-4 fresh apricots, sliced (nectarines, peaches, or plums would also work)

1 avocado, diced

1/2 bunch cilantro, roughly chopped

1/3 cup roasted unsalted almonds, roughly chopped

Dressing:

3 tablespoons fresh lemon juice

2 tablespoons olive oil

2 teaspoons raw honey

1/2 teaspoon ground cumin

salt to taste

Rinse the rice. Bring 2 1/2 cups water to a boil. Add the rice, then turn the heat down to a simmer, cover and cook until the water has been absorbed and the rice becomes tender, about 35-40 minutes. Remove from heat and set aside to cool slightly.

Meanwhile, in a small bowl whisk together all ingredients for the dressing, set aside.

Place the wild rice, arugula, apricots, avocado, and cilantro in a large bowl, pour over the dressing and toss to combine. Toss in the almonds just before serving.

I love the addition of fruit in salads. The combination of sweet and salty with herbs and vinegar is so refreshing, especially on a warm afternoon. Wheatberries would also be a good addition to a salad!
