3 Simple Breakfast Ideas

Breakfast is the most important meal of my day. When I wake I cannot start my day properly without having a good, wholesome breakfast.  During my work week there’s sometimes not enough time to eat a full breakfast, so quick and simple ways to get good energy in the mornings is what I love.

I have followed Simply Breakfast for quite some time and always get inspired by the way she styles her breakfast in photographs and – more importantly – the simple recipes she uses.  She sets the atmosphere really well and makes you desire whatever she makes. Bread and bagels is an easy go to when looking for something filling in the mornings and something to give you a little energy.  Here I picked out my 3 favorite toppings to go onto bread and bagels from Jennifer Causey’s wide selection from Simply Breakfast.

Idea one, above: sunflower seed bread with sunflower seed butter with slivered almonds and green tea.

Sunflower seeds have great benefits; they are high in energy and are rich in vitamin E. Almonds are good for the brain, they induce high intellectual levels and are good for the heart. Green tea increases your metabolism and helps regulate your glucose levels – it’s always good to start your day with this.

Idea two:  basic avocado and hummus on a bagel

I love avocado – I try and eat half of one every day!  Some people are scared of avocado because of its high calorie count, but that doesn’t mean it’s not good for you – they hold half of your daily fiber count, which gives the fruit great fat-burning abilities. They give your body plenty of nourishment with vitamins A, C, E, K and B6.  Hummus as a whole contains plenty of omega 3 fatty acids, which improve intelligence and help maintain a healthy heart.  Hummus is loaded with nutrients that contribute to a healthy lifestyle and uplifting your mood.

Idea three: tomato and avocado on toast with black pepper

Simple, easy and delicious – adding tomatoes with your avocado is a great combination, finished with some pepper on top.  I was always told to eat tomatoes on a daily basis, as they keep your skin young and bright.  They also contain 40% of the recommended daily allowance of vitamin C.  So in the mornings you can simply cut a tomato and an avocado into slices, place them on top of toast, finish off with a little olive oil and pepper and maybe some lemon and you’re good to go.  It’s important to fuel your body in the mornings.

Great ideas! But may I ask how you eat only one half of an avocado every day? What do you do with the other half, how do you store it so it won’t go bad until the next day?

keeping the pit with the half that you put in the fridge prevents oxidizing, also putting aluminum foil over the cling wrap ensures that there will be very little (if any) browning.
