Recipe: Mediterranean Lentil and Couscous Salad

I have been obsessed with lentils as of late. I always have a big batch of cooked lentils on hand and they are great in so many things. Salads, soups, pasta, a quick curry, egg scrambles and so on. When I came across a box of gluten-free brown rice couscous at the market last week I swiftly grabbed it and instantly knew I had to make some type of couscous and lentil salad. Since couscous isn’t traditionally gluten-free, I haven’t had it in over 8 years and I was so excited to play with it in a simple and healthy recipe like this one.

This is great as a light lunch, a side salad or, in a larger quantity, it’d be great as your main meal. I served a small serving for lunch after taking these photos and then we made a dinner out of it by topping it with some baked falafels and a drizzle of tahini dressing.

I think this will definitely become a picnic staple in my life this summer. It is so simple to make, loaded with beautiful colors and flavors and I love how healthy it is.

Mediterranean Lentil and Couscous Salad – Gluten-free + Vegan

2 cups cooked couscous, cooled (I used gluten-free brown rice couscous)*
2 cups cooked green lentils, cooled
2 stalks celery, chopped
1 small red onion, finely chopped
3-4 roasted red peppers, chopped
1/2 cup marinated artichoke hearts, roughly chopped
3-4 cups spring mixed greens (or other greens like arugula, baby spinach, etc)

Vinaigrette:
3 tablespoons balsamic vinegar
1/4 cup olive oil
1 tablespoon whole grain mustard
1 clove garlic, minced
1 teaspoon fresh oregano, roughly chopped (or less if using dried)
salt and pepper, to taste

Optional: Top with crumbled feta or goat cheese, if not vegan

In a small bowl wisk together all of the vinaigrette ingredients and set aside.

In a large serving bowl add all of the salad ingredients and toss gently to combine. Just before serving pour the vinaigrette over top and gently toss again to incorporate. You may not want all of the dressing on there, so don’t dump it all over at once. Salt and pepper to taste and serve.

*If you are gluten-free or making this for something gluten-free, please be SURE your couscous is certified gluten-free.

Hey everyone. So glad you liked the recipe. The spoons are amaze right? They are originally from Target as part of their limited time pop-up shops. These from a company called “TheCuriosity Shoppe” who seems to no longer be in business. :(( I will cherish these spoons even more now.
