The first post in our series for May, healthy juice recipes from Kelsi Windmiller!
This month I will be sharing some of my favorite juice recipes – great for a spring cleanse! These juices add a healthy dose of vitamins, nutrients, and antioxidants to your diet. This first recipe contains primarily green ingredients. It’s important to use quality produce when juicing. Kale and parsley are both amazing greens, but they do have a very distinct smell and taste. Many people are unable to drink them as is, so I recommend this combination of fruits and vegetables.
Kale & Parsley Juice
1 Bunch Lacinato Kale
1 Bunch Flat Leaf Parsley
3 Large Granny Smith Apples
1 Cucumber
2 Lemons
8oz Water (optional)
Start by washing all of you vegetables. Remove as much of the rind from your lemons as you can before juicing to avoid being too tart. Run all of the ingredients through your juicer and combine in a pitcher. Add water if you find that it is too strong and would like to get more juice from the recipe. I keep mine stored in mason jars in the refrigerator. It keeps them fresh and convenient to grab and go about your day.

This is actually really good if you add fresh mint and omit the lemons in exchange for 1 lime. I also add some ginger root. Yum!!!

I do pineapples instead of the lemons too…so yummy! My whole family loves it including my 4 and 2 year olds!

@kelly, . . . can’t tell if anyone ever answered your question, I just stumbled upon this site a few minutes ago, but if you buy an upright masticating juicer, e.g., Omega VRT350HD, you can get a great yield of juice, (about 16 ounces) from a head of kale leaves, (roughly about 8 – 10 kale leaves, stems and all). Centrifugal juicer s won’t yield a lot of juice from kale leaves or leafy greens because they operate at a much higher RPM rate and your juice yield will start losing the overall nutritional value in under 15 minutes after juicing. To get the most nutritional value from juicing fruits and vegetables, always go with a masticating juicer, juice from a good masticating juicer will store refrigerated for up to 72 hours and maintain most of the original nutritional value for the following 72 hours! ;-)
