This is the last post in our 5-minute meal series from Kelsi Windmiller.
For the last fast recipe of the month I would like to share with you how to make a simple stuffed avocado. Avocados are amazing on their own but here is a quick way to make a meal of one. Start by making an easy corn salsa, and add black beans for protein and hot sauce for spice. Then all you need to do is top your avocado with it!
1 Avocado
1/4c Black Beans
1/4c Raw Corn
1/4c Diced Tomato
Picked Fresh Cilantro
1/2 Lime Juiced
Salt & Hot Sauce To Taste
Combine the black beans, corn, tomato, and cilantro in a small bowl.
Toss with fresh lime juice and salt until evenly coated.
Slice your avocado in half. Remove the pit and discard.
Fill the avocado halves with the black bean mixture and top with your favorite hot sauce.
Enjoy!
