I’m a huge fan of quinoa. It’s a healthy replacement for grains like rice and couscous, and it can be incorporated into so many different dishes. My favorite quinoa recipe is actually one I came up with on my own when I was throwing together random ingredients in my kitchen. It contains only three ingredients: quinoa, avocado, and feta cheese.
To make, mash up half an avocado and mix into one serving of cooked quinoa. Add a pinch or two of crumbled feta, and stir to combine.
The combination of avocado and quinoa creates a consistency that’s extremely satisfying to eat, and the addition of feta adds the perfect hint of salt. This can be served hot or cold, and is just as excellent as a side dish as it is on its own. I seriously urge you to try this recipe. Jana had a taste a few months ago and she’s been hooked ever since!
