Update: This post originally ran June 18, 2013, but we’ve been craving a sweet fall dessert, and this is a perfect — and healthy — option!
Chocolate mousse is a beautiful thing. It’s light and delicious and can be enjoyed alone or with fruit, cake, cookies, and a million other things. Today we’re sharing an incredibly simple recipe for chocolate mousse – and it’s vegan! Since dates are naturally sweet, you can use unsweetened coconut milk and unsweetened cocoa powder, making this recipe a healthy choice, as well.
Vegan Chocolate Mousse
Serves 4
Ingredients:
1 can full fat coconut milk
1/3 cup cocoa powder
1 cup tightly packed dates, pitted
2 drops vanilla extract
Directions:
First, refrigerate your coconut milk to solidify. Separate liquid from solid by spooning off the top layer into a container. Discard the liquid – or save it for a drink!
Blend 2 tablespoons of coconut milk with 1 cup of dates until your mixture is as smooth as you can get it. Strain out any bits if you’d like. Add the cocoa powder and the rest of the coconut milk and blend again. Divide into 4 individual containers and refrigerate for several hours.

Literally just made this 5 minutes ago & WOW. It is freakin’ delicious. Super satisfying & just the right amount of sweet. I really like the subtle coconut flavor too. Will definitely be making it again! I still can’t get over the fact that this is dairy free. It’s so rich & creamy you’d swear it’s made with cream or milk.
This is SO amazing. I cannot stop eating it – it’s at least just as good, if not BETTER than the traditional kind!

I have tried this recipe before and I was wondering if you ever thought of using it as pie filling with maybe a date and nut pie crust?
I’ve had the coconut milk in a closed Mason jar in the fridge for four days and it still hasn’t solidified, can I just use liquid milk? How else can I solidify it?

use the creamy top layer of the can and discard the coconut milk.
Just made this.. It’s delicious! I had to use a little more of the coconut milk to reach the right consistency but it got nice and creamy in the end. Finished it with a sprinkle of coconut flakes. Yummy!
