Quinoa Fruit & Nut Bars (Vegan & Gluten-Free)

Browsing none other than the amazing Pinterest the other day, something delicious caught my eye: quinoa fruit & nut bars.

First of all, quinoa is my homeboy. I love that stuff with all my heart, and I’m always looking for new ways to incorporate it into my diet – especially because I eat mostly gluten-free. Secondly… why have I never thought to make my own fruit and nut bars? Well, now I’ve done it. And you should too.

These are surprisingly easy to make, they’re incredibly healthy, they’re customizable to your own little taste buds, and they are absolutely delicious. I brought these in to work to photograph them, and I had to basically bat away people’s hands as I was trying to take photos. Everyone wanted in.

Quinoa fruit & nut bars

Ingredients

1 cup quinoa flakes (I found these next to the regular quinoa at Whole Foods)

1 cup raw almonds, whole

¼ cup shredded coconut

1 cup dried cranberries

1 cup dried apricots

½ cup apple juice

¼ cup sunflower seeds

Directions

  1. Preheat your oven to 350 degrees F. Combine the quinoa, almonds, and coconut and spread out onto a cookie sheet. Bake for 7-10 minutes until they’re lightly golden, then allow to cool.
  2. Add all ingredients into a food processor and mix until finely chopped. Continue to mix while adding in the apple juice a little bit at a time.
  3. Line a dish with parchment paper. Spoon the mixture in, and press down on top until firm and even. Sprinkle some extra sunflower seeds and coconut on top if you wish, and then refrigerate overnight.

Sounds delicious!! I would add a little bit of cacao powder or honey, for added sweetness. Will be experimenting with these at home for sure… Thanks for the ideas!

I love those! I recently started making home made bars too with tahini and agave nectar but never tried with apple juice, sounds really good!

i just made these but used buckwheat flakes, peanuts, and dates instead. could use something a little more sweet like the cranberries, but still turned out great! thanks for the recipe :)
