This is the second post in our Refreshing Recipes series from Jill of a Better Happier St. Sebastian.
Radish Salad
1 head little gem lettuce (bibb lettuce also works)
1 head frisee lettuce
1 large bunch radishes, washed, trimmed, greens removed
Honey mustard poppy seed vinaigrette (recipe to follow)
Using a mandoline or very sharp knife, slice radishes paper thin. To serve, toss lettuce leaves with dressing. Top with radishes.
Honey Mustard Poppy Seed Vinaigrette
2 tbs dijon mustard
1 tbs honey
1 tbs champagne vinegar
3 tbs olive oil
1 small shallot, minced
2 tsp poppy seed
Salt and pepper to taste
In a small, nonreactive bowl, whisk to combine all ingredients. Season to taste with salt and pepper.
