Strawberry Arugula Salad
About 2 cups baby arugula
1 cup fresh strawberries, sliced
¼ almonds, chopped and lightly toasted
Honey Lemon Dressing
makes ½ cup
Juice from one lemon
1 tablespoon honey
2 tablespoons extra virgin olive oil
4 strawberries, muddled
In a small bowl, whisk together the lemon juice, honey and olive oil. Add muddled strawberries and continue whisking until combined. Alternatively, you can combine all ingredients in a jar and shake until completely mixed.
To serve, toss the baby arugula, sliced strawberries and almonds in desired amount of honey lemon dressing. Enjoy!
