Extra Super Overnight Superfood Pudding

If you’re looking for a superfood breakfast, this is your answer. Hands down.

I’ve recently gotten into making pudding from chia or flax seeds, and I decided I may as well put them together and throw in any other superfoods I can think of. It really is delicious, and so very good for your health.

Superfood pudding is great because you can prep your add-ins before bed and soak the seeds overnight so it’ll be ready for you when you wake up! But it really only takes about 30 minutes if you want to make it day-of. Here’s how it’s done!

Ingredients:

¼ cup chia seeds

¼ cup golden flaxseed meal

1 ¼ cup almond milk (learn to make your own here!)

1 teaspoon raw stevia

½ sliced apple

½ sliced banana

2 tablespoons walnuts, chopped

2 tablespoons sliced almonds

1 tablespoon coconut flakes

Directions:

Combine the chia seeds, flaxseed meal, almond milk, and stevia into a bowl or jar. Stir together and let sit for at least 30 minutes – or overnight, covered, in the refrigerator.

It will start to turn into a gelatinous substance almost immediately, which is really cool to see.

Once you’ve got your pudding, mix in your add-ins and you’re ready to eat! So delicious.

mmm! I’d add pumpkin puree! or add a little molasses and ginger/spices to make it gingerbread-y
