Vegan Pumpkin Pie Martini

I love this super fun, fall-inspired cocktail, it’s literally like dessert in a glass! This creamy vegan pumpkin pie martini is great for entertaining, whether at a Halloween shindig this weekend, or for another holiday get together later in the season. It’s full of amazing pumpkin flavor and it’s sure to put you in the autumn mood.

Vegan Pumpkin Pie Martini

serves 1

1 tablespoon coconut sugar with a pinch of cinnamon (for the rim)

1/4 teaspoon ground cinnamon

a pinch or two each of ground nutmeg, ginger and cloves

2 ounces good quality gluten-free vodka

3 tablespoons organic coconut milk (the canned kind)

2 tablespoons canned or fresh pure pumpkin puree

2 tablespoons pure organic maple syrup (or honey)

1/4 teaspoon pure vanilla extract

Mix together the coconut sugar and the cinnamon on a small plate. Dip the rim of a chilled martini glass in water, then dip in the sugar to coat the edge.

In a martini shaker, add a few ice cubes and combine the vodka, coconut milk, pumpkin puree, maple syrup, vanilla extract, and the spices. Shake vigorously, then strain into the prepared glass.

NOTES:

Feel free to replace the spices with a pumpkin pie spice blend, if you have one on hand.

You can use any granulated sugar of your choice for the rim
