How To Make Healthy No-Corn Popcorn

I love the taste of popcorn – and I’m thinking you probably do, too. I stopped eating corn products about a year ago due to health concerns, and when I got an accidental whiff of some buttery popcorn a week ago, I was immediately taken back to nights spent at the movies with a gigantic tub of that delicious salty snack in my lap.

Soon after, it dawned on me that I could make my own healthy version of popcorn that didn’t actually include corn at all. The key ingredient: rice cakes. The rice cakes I eat contain nothing but organic brown rice. No preservatives, no chemicals, nothin’ but pure nutrients.

Brown rice happens to be one of the healthiest grains out there – maybe even one of the healthiest foods. It’s filled with vitamins and minerals, and has tons of fiber. It’s believed to lower cholesterol, increase heart health, help the nervous system, and stabilize blood sugar, just to name a few of its myriad of benefits.

Here’s how to make this delicious no-corn popcorn.

Ingredients:

4 brown rice cakes

1/8 cup extra virgin olive oil

1 teaspoon pink Himalayan salt

Using your hands, break up the rice cakes into small pieces. Lightly brown your pieces in a frying pan over medium heat for a minute or two, stirring occasionally. Drizzle olive oil on top and mix to coat evenly. Add your Himalayan salt and mix once more.

Remove from heat, pour into a bowl, and enjoy!

I love using other kinds of popped grains as well, such as sorghum, buckwheat, and amaranth. They look pretty awesome all together and they can taste pretty amazing as well! X
