(Apple) Butter Me Up

Autumn in a jar…with a wonderfully smooth texture.

Let’s just say I put apple butter on my apple butter.

I love the stuff. And instead of buying it all season, I’ve decided to make a big batch to share with my tummy, and all of my friends.

First thing first. You don’t need to be great in the kitchen to whip up a jar (or 10). The ingredient list is simple, prep is a breeze, and your crock pot will be your best friend. All you need is time. I suggest making this on a Saturday morning. You can go on with your day, and pop in and out of the kitchen whenever you please.

So we begin.

No Added Sugar Apple Butter

Ingredients:

3 lb organic apples (I used Honeycrisp, Envy and Gala)

3-5 cinnamon sticks

1 tsp nutmeg

1 tsp ground ginger

1 tsp cloves

1/2 cup water

Prep. Wake up, pour yourself a cup of coffee/tea/lemon water and pull out the good ol’ crock pot because… why would we make it harder on ourselves? Pour in 1/2 cup of water, and turn that bad boy on. While it’s warming up, core and cut your apples. Put peeled (OR UNPEELED — UP TO YOU) apples into a bowl, add dry ingredients, and fold a few times to make sure the apples are coated.

Cook. Transfer mixture into crock pot, and cook on low for 4 hours. (I suggest reading one of my book suggestions in the meantime while rubbing your dog’s tummy but, hey, do what ya want).

When your apples can be smashed with a fork, then do so. First, remove your cinnamon sticks. If you are cool with chunkier apple butter (hi, that’s me), feel free to just use a potato masher. For fans of a smoother consistency, grab an immersion blender and puree the mixture.

Replace the pot lid, but allow some space for steam to vent. Cook for another 4 hours on low, until the mixture has reduced and thickened up.

Jar. Transfer mixture to air-tight glass jars, let cool, and store in the refrigerator up to two weeks. *I put mine in the freezer for longer shelf life. Also, give give give. These make the best presents, and I know all of your friends want one.

Eat. My favorite way to eat apple butter is on fresh harvest sprouted bread. Pop some in the toaster, spread the apple butter, and I swear you will have the best start to your day.

How much apple butter does one batch make? Thank you so much for sharing this recipe! I’m obsessed with apple butter, but it’s been so long since I’ve had it.
