a creative cake

one of our fp girls made this amazing cake for a special occasion at the office – more on that later – and she shared her recipe and instructions below! i’m already thinking about all the pretty color combinations i’d want to try…

the recipe she used is for a traditional white cake and she doubled the measurements for the rainbow cake.

ingredients:
2 cups sugar
1 cup butter
4 eggs
4 teaspoons vanilla extract
3 cups flour
3 1/2 teaspoons baking powder
1 cup milk

directions:
set oven to 350 degrees. grease three 8 inch-9 inch circular pans.

cream sugar and butter. add in eggs, one at a time, then vanilla. in a separate bowl, stir flour and baking powder together. add it into butter mixture and mix well.  stir in milk. separate the batter into three bowls.

add food coloring of choice to each bowl. she used gel food coloring, which tends to be brighter than the liquid drop kind. mix your colors then pour into the prepared pans.

bake about 25 minutes or so, or until ready. the cakes are ready when a toothpick comes out clean or it springs back when you touch it!

frosting recipe – dark chocolate cream cheese frosting:
1 cup unsalted butter
16 ounces cream cheese
5 cups confectioner’s sugar
2 tsp vanilla
1 cup cocoa powder

mix cream cheese and butter. add in vanilla. add in sugar. stir in cocoa powder last.

when the cakes have completely cooled, cut off the tops of the cakes to make them flat, so that the cake isn’t lopsided.

add a thin layer of frosting. this is called a crumb coat – it seals all the crumbs in. after the crumb coat is done, refrigerate the cake so that the frosting sets. then stack the layers and frost the cake, decorate however you’d like – and enjoy!
