Summer Salad with Spicy Pecan Dressing

I picked up some blue cheese along with freshly picked apples at the local farmer’s market one weekend. When I got home, the two ingredients turned into this fresh summer salad with a toasted fennel and spicy pecan dressing. The mixture of sweet, pungent, and spicy is just too good to not enjoy this summer. Enjoy!

Salad Ingredients

2 Cups Spinach 

1 Fiji Apple

¼ Cup Crumbled Blue Cheese

¼ Cup Raisins 

Dressing Ingredients 

2 Tbsp Toasted Fennel Seeds

1 Cup Olive Oil

¼ Cup Toasted Pecan Vinegar

Juice from ½ Lemon

Salt & Pepper to Taste

Pecan VinegarSpicy Pecan Dressing Ingredients


Toss salad ingredients in a large bowl

Stir together dressing ingredients in a smaller bowl

Dress salad according to taste

Easy as 1, 2, 3 :)
