If you’re like me and can enjoy a cookie almost every day, then you will like this recipe. Not only will they satisfy your sugar cravings, but they are also vegan and to go alongside our love theme of the month we decided to make them in the shape of hearts.
These heart shaped cookies will fill you with warmth and will make for a cute little gesture to give to your friends, loved ones, and family on Valentine’s Day. Or, just have them on the coffee table for when guests come around and enjoy with a cup of tea.
So here you go, a vegan recipe for chocolate-dipped sugar cookies!
Ingredients:
1/2 cup of vegan butter
1/2 cup of cane sugar
1 tsp pure vanilla extract
3 tbsp vegan sour cream
pinch of salt
1/4 tsp baking soda
1 1/4 cups of unbleached flour
How to make:
Preheat oven to 350˚F. Line a large baking sheet with parchment paper and set aside.
In a large mixing bowl, add the butter, sugar, vanilla extract, and sour cream. Use a hand mixer on high speed and mix for 1-2 minutes until light and fluffy.
Mix in the salt and then add in the baking soda and flour; beat just until combined.
Bring the mixture into a ball and roll out onto a cutting board. Using a heart shaped cookie cutter start making shapes.
Once you have the cookies cut out, place on the baking tray and bake for 10 minutes or until golden. Allow to cool on baking tray. Melt the chocolate chips in a saucepan on low heat, when melted dip the top of the cookie in, and sprinkle chocolate or pink sprinkles and set on a rack to harden.
and there you have it, heart shaped sugar cookies for Valentines Day!
