Summer CSA Recipes: Grilled Cheese

The third post in our summer CSA recipe series from Kelsi Windmiller!

This week there was brie in our CSA, so I had to make a grilled cheese! Brie and strawberries go perfectly together and there should be plenty in your share. If you find that they are starting to turn, take the opportunity to make some jam with them before it’s too late! I recommend adding a vanilla bean for this recipe. Making a pesto out of your basil (or any other herb from your CSA) is another great way to get the most of your produce when it’s too wilted to serve whole. This grilled cheese has some great flavors but feel free to mix and match your produce and see what you can come up with!

The Jam

2 Cups Strawberries
1 Cup Sugar
1 Vanilla Bean
1/2 Lemon

Wash the berries, then remove their stems and cut in quarters. Combine the sugar and strawberries in a mixing bowl. Toss until evenly coated and then let sit for 40 minutes to an hour or until the sugar is dissolved. Split the vanilla bean and scrape out its seeds with the back of your knife. Add the vanilla to the strawberries then cook in a sauce pan over medium high heat for about 20 minutes or until the mixture thickens. Remove from heat and stir in a fresh squeeze of lemon juice. Set the jam aside to cool.

The Pesto

1 Cup Chopped Basil
1/3 Cup Extra Virgin Olive Oil
1 Small Clove Garlic
Salt to Taste

Combine all ingredients in a food processor or blender until smooth.

The Grilled Cheese

Sliced Sourdough Bread
Strawberry Vanilla Jam
Basil Pesto
Buttercup Brie
1 Bunch Asparagus
Butter

Start by sautéing the asparagus with a splash of oil and a pinch coarse salt until browned and slightly crispy. Set aside and clean your pan. Spread a thin layer of butter on two slices of bread. Flip the bread over, then spread a layer of jam on one side and a layer of pesto on the other. Lay some thin slices of brie over the jam, then arrange a layer of asparagus on top of the brie. Cover the sandwich with the remaining slice of bread, then place in a hot frying pan until cheese is melted and sourdough is golden brown. Enjoy!

Another one of my favorite grilled cheese sandwiches is Brie with grilled portabello mushrooms and fresh basil on an artisan French or an Italian loaf! Yummmmm!!

subbed the brie for non dairy jack cheese to make it vegan. it was just as delicious.
