5-Minute Meals: Red Radish Salad

The first post in our recipe series for the month of July, 5-minute meals, from Kelsi Windmiller!

This month I will be sharing some quick and healthy recipes that still have plenty of flavor. Sometimes you just need a fast and simple recipe, especially after a long day of work. Hopefully you will already have these ingredients in your kitchen. You will save even more time if you don’t need to stop at the market! Radishes seem to be everywhere lately and they have some amazing health benefits – they are a natural diuretic and contain a large dose of vitamin c. I always have fresh ginger on hand for making tea, and it adds amazing flavor to any recipe. Sesame seeds are one of the most commonly used medicinal foods and they add a nice texture to this salad. I always have leftover quinoa, rice, and other grains in my refrigerator that need to get used up. For this salad I used some freekeh, an ancient grain also known as green wheat. This salad only takes minutes to make! I recommend having a cup of green tea with it :).

Red Radish Salad

1 Bunch Radishes

1 Small Ginger Root

1 Diced Small Red Onion

1/8C Chopped Parsley

2T Rice Wine Vinegar

1T Olive Oil

2T Sesame Seeds

1C Grain

Salt to Taste

Place the radishes in a food processor with the peeled ginger root and pulse until roughly chopped. In a mixing bowl combine the onion, parsley, rice wine vinegar, oil, sesame seeds, salt, your grain, and the chopped radish with ginger. Lightly toss until evenly coated. Enjoy!

It looks like natural and organic recipe. The salad contains nutrition, vitamin c and iron. I prefer such things during meal. It boosts your digestive power and helpful for hemoglobin.
