5-Minute Meals: Raw Vegetable Wrap

This recipe is part of our 5-minute meal series from Kelsi Windmiller.

This week I would like to share another quick and healthy recipe that’s perfect for summer days when you’re on the go!  All you need to make this wrap are some fresh sliced vegetables, herbed goat cheese, and a brown rice wrap. Keep the wraps frozen until right before you plan on using them. Toast the wrap on your stove top until warm and slightly browned. Spread a thin layer of goat cheese on the wrap and then stack on your veggies. For this wrap I added tomato, cucumber, mushroom, pepper, onion, and broccoli sprouts. If you would like a vegan alternative I recommend using vegan cream cheese or smashed avocado with a little sea salt. Enjoy!
