This week’s recipe may help take away your pizza cravings in the healthiest way. It takes only a minute to prepare but needs some extra time in the oven. Zucchini is in season right now and if you are growing it in your garden you will have almost too much! This pizza recipe uses zucchini in place of dough for crust. It is topped with roasted cherry tomatoes, fresh oregano, and grated cheese.
Zucchini Pizza
1 Zucchini
1c Cherry Tomatoes
1/4c Shredded Parmesan
3 Sprigs Fresh Oregano
Garlic Salt
Olive Oil
Preheat oven to 450 degrees Fahrenheit. Slice zucchini into one inch thick pieces on an extreme bias and lay flat on a lightly oiled baking sheet. Half some cherry tomatoes and place them on top of the zucchini. Drizzle with a little olive oil, a sprinkle of salt, and some oregano leaves. Roast in the oven for 10 minutes or until the edges begin to brown. Remove from heat, sprinkle with cheese, and put the pizzas back into the oven for a minute to melt the cheese. Remove from the baking sheet with a spatula and serve immediately!

I am making this as we speak, but its aaalll from my very own garden! (I substituted fresh basil from the garden for the oregano). Hope it turns out good:)
So how was it
I made them a second ago! they are the best! My sister doesn’t like zucchini so we used salami. we call it “Meatzza”.
we cooked them at 400 C for 2 min. We topped them with good quality parmesan cheese, tomatoes, fresh oregano, basil tomato pasta sauce and some ginger. I would highly recommend putting fresh ginger on this! Great appetizers that are highly changeable if you want to get resourceful!!!
I was looking for an interesting idea to substitute classic pizza crust with something.. different.. and I think I found it! Thanks for the awesome recipe!
