3-Ingredient Quinoa Recipe

I’m a huge fan of quinoa. It’s a healthy replacement for grains like rice and couscous, and it can be incorporated into so many different dishes. My favorite quinoa recipe is actually one I came up with on my own when I was throwing together random ingredients in my kitchen. It contains only three ingredients: quinoa, avocado, and feta cheese.

Quinoa, avocado, feta

To make, mash up half an avocado and mix into one serving of cooked quinoa. Add a pinch or two of crumbled feta, and stir to combine.

The combination of avocado and quinoa creates a consistency that’s extremely satisfying to eat, and the addition of feta adds the perfect hint of salt. This can be served hot or cold, and is just as excellent as a side dish as it is on its own. I seriously urge you to try this recipe. Jana had a taste a few months ago and she’s been hooked ever since!

I am a celiac, but I can eat quinoa because it’s wheat & gluten free! It’s very rare that I find inventive celiac recipe’s on the net!

I literally eat this everyday :) I’m gluten intolerant, and hate cooking – so this is perfect for me. Adding lemon juice is my final step though. I love citrus with the salty feta and creamy avocado.

Oh my goodness just reading and looking at the pictures is making my mouth water!! Sounds SO good. I have recently found a love for quinoa so this is perfect!!!!

Wonder if it would be good with goat cheese?


This sounds amazing, minus the cheese of course. I wouldn’t even replace it with anything, but you could use nutritional yeast instead. Not only is it vegan friendly, but also much healthier!

I made this tonight and it was delicious! Easy and so filling. The feta really makes the dish.
