Serves 4

Roasted Lemon Gremolata
1 cup parsley, stems removed
1 clove garlic, skin removed
2 lemons
1 tbs olive oil
salt & pepper

Set broiler in oven to high. While heating, cut 1 lemon in half and place cut side up on baking sheet. Broil for 10-15 minutes until lemon begins to brown and blister. Set aside to cool.

Chop parsley thoroughly until it is broken down into small pieces. Using a micro-plane grater, grate the garlic clove into parsley. Using the same grater, grate the zest from the un-roasted lemon into garlic and parsley mixture. Chop mixture to combine and transfer to a small dish. Add juice of roasted lemon, olive oil, and salt and pepper. Mix to combine.
