A summer day is not a summer day without a delicious ice pop to accompany you under those gorgeous sunrays.
There is absolutely no need to go out and buy store-bought ice pops when you can make even more delicious – and surprisingly healthy – ones in your very own kitchen. I whipped up a batch of these using some ingredients that I thought would go delightfully together. And guess what? They do. They taste just like a summer day. Here’s how to make them!
Ingredients:
1 medium mango, chopped
3 medium bananas
1 cup coconut milk
½ cup shredded coconut
1 teaspoon vanilla extract
Place all ingredients – except the shredded coconut – in a blender and mix until you have a smooth consistency. Then add the shredded coconut and mix with a spoon. Pour into your ice pop molds – if you’d like, sprinkle a little extra coconut right before inserting your ice pop stick. Then freeze for at least 4 hours, or overnight.
I decorated my popsicle sticks with a little bit of acrylic paint before making these, just to give them something extra. These are so, so delicious.

I love using bananas as a base for non-dairy ice cream :) also if you blend up already frozen bananas with whatever flavour you want then you get instant soft serve ice cream!
