Apple Spiced Granola Breakfast Bowl

Apple Spiced Maple Granola

2.5 cups rolled oats
1.5 cup chopped walnuts
1/2 cup dried apples, roughly chopped
1/4 cup light brown sugar
2 tsp cinnamon
1 tsp sea salt
1/2 cup unsweetened applesauce
1/4 cup rice syrup
1/4 cup maple syrup
3 tbs walnut oil

Preheat oven to 300°. In a small saucepan over low heat, stir to combine the applesauce, rice syrup, maple syrup, and walnut oil until well mixed. As mixture is warming, combine oats, walnuts, almonds, brown sugar, cinnamon, and salt in a large bowl. Mix the contents of the saucepan into the dry ingredients thoroughly until well combined. Spread evenly on a well-oiled baking sheet, and bake for 40 minutes, stirring every 10 minutes. Add the dried apples to the mixture and stir to combine. Bake for an additional 10 minutes. Remove from oven and cool completely.

Apple Spiced Granola Breakfast Bowl

1 cup Greek yogurt
1 tsp cardamom
2 tsp maple syrup
1/2 cup Apple Maple Cinnamon Granola (recipe above)
1/2 large apple, sliced
1/2 tbs butter
1 tbs cinnamon

In a small skillet over medium heat, melt butter. Add apple slices and cinnamon, tossing to coat apples. Cook, stirring occasionally, until apples are softened, about 5 minutes. Remove from heat and set aside. In a small bowl, whisk to combine Greek yogurt, cardamom and maple syrup. To serve, spoon whipped yogurt into bowl, top with cooked apples and granola.
