Paleo Chocolate Chunk Granola

I began eating like a cave woman exactly 6 months ago. Similar to the Whole30, I’m all about whole, real, organic foods; no grains; no dairy; limited starches; and no refined sugar. It has changed my life for the better, and I’m so, so happy that this is my new way of living. While making the switch was not nearly as difficult as one might imagine, I must admit: There are things I miss. Of course there are!

Oats are one of those things. Oats used to be a staple in my diet, but although I eat them no longer, there’s still a way to satisfy that craving. This paleo granola does exactly that.

Ingredients:

1 cup raw almonds
1 cup raw walnuts
¼ cup raw sunflower seeds
¼ cup unsweetened coconut flakes
Juice of one apple (juice it yourself if possible!)
1/8 cup coconut oil
1/8 cup flaxseed meal
1/8 cup almond meal
¼ cup raisins
1 teaspoon vanilla extract
2 teaspoons ground cinnamon
1/8 cup paleo chocolate, cut into chunks (I love this kind!)

1. Preheat oven to 300 degrees F. Heat coconut oil over the stove until melted. Combine almonds, walnuts, sunflower seeds, apple juice, and coconut oil in a blender and pulse until roughly chopped.

2. Pour mixture into a large bowl. Add the rest of the ingredients – excluding the chocolate – and mix well.

3. Line a cookie sheet with parchment paper. Spread mixture evenly over paper. Bake for about 30-40 minutes (or until golden brown), removing every 10 minutes or so to move the mixture around a bit with a spoon or spatula. This ensures that it bakes evenly.

4. Once it’s golden brown and smelling delicious, remove from the oven and allow to cool for about 10 minutes – this part is crucial if you want those lovely clusters to form! Once cooled, add your chocolate chunks, and it’s ready to eat.

This is so delicious sprinkled over warm homemade applesauce, or eaten like cereal in a bowl of freshly-made almond milk!

Store in the refrigerator an airtight container for a week or two – although this is so delicious, I doubt it’ll last that long!

This is such an Awesome idea! I’ve heard a lot about the Paleo diet and I’m curious to try it! I really love the idea of making this as a snack that you can grab and eat instead of reaching for something unhealthy. Thank you for sharing!!!!

this looks great…i did the whole30 for 2 months and felt better than ever. during the holidays i’ve fallen off the wagon a little bit and can’t wait to start this as a lifestyle rather than just a 30 day cleanse. this granola will be a great snack!

Is the apple juice a blended apple (apple sauce) or liquid apple juice?
