A Healthy Headstart: Banana Coffee Vegan Breakfast Smoothie

Let’s be real, my decision making in the morning isn’t as strong as I’d like to think it is. It begins with the poor decision to snooze past my alarm, which often leads to a panicked outfit, socks that don’t match, unbrushed wild hair, and hastily applied moisturizer. Do I have time to swing by the kitchen for a leisurely cup of coffee and warm breakfast? Uh, no, do I also magically look like Jennifer Lawrence now too? I chuck my daily essentials into my tote and sprint myself out the door before realizing I forgot my keys.

This frenzied morning routine also includes running into a coffee shop to fuel/wake up. Would I like to make my latte a quadruple shot? No doubt. How else will I ever wake up? Oh, I should probably take that gigantic sugary danish to go as well. Actually scratch that, I’m starving… I’ll take the biggest breakfast burrito you have and yes, I will eat the entire thing. It’s scary how frequent this routine is. It never leaves me feeling satisfied or awake, however. Quite the opposite actually – I’m sluggish and inhumanely full, but quickly hungry once again.

Well, I’m officially trying to improve my decision making skills, starting with the food I eat in the morning. This vegan and gluten free smoothie is light to drink, high in flavor, and will keep you feeling full and energetic all morning. Almond butter is high in protein and fiber, but low in sugar which keeps you feeling more satisfied than a breakfast low in protein and high in sugar. Coffee has many potential health benefits when consumed in moderation, including promoting heart health, protecting against liver disease and cancer, type 2 diabetes, and Parkinson’s disease. Plus coffee provides the perfect morning perk. Bananas are rich in fiber, antioxidants, and other various nutrients. The general population knows that bananas are a good source of potassium, but they are also strong providers of Vitamin C and Vitamin B6. In addition, they may moderate blood sugar levels and the type of fiber found in bananas slows stomach emptying and keeps you fuller longer. So the next time you’re in need of a quick pick-me-up that’s nutritious and delicious, try this vegan and gluten free banana coffee vegan breakfast smoothie! Your morning routine will thank you.


Banana Coffee Breakfast Smoothie


1 cup almond milk

1 sliced banana

1 tablspoon almond butter

1 (or 2) espresso shots

3/4 cup ice

Add all ingredients to a blender. Blend for about one minute or until smooth. Add more coffee, banana, or almond butter to taste. For texture, add 5-7 coffee beans to blender. Garnish the top with espresso dust, if desired. Enjoy!

What is going on with the blog these days? The posts seem to be lacking, there used to be 3-4 new content everyday and now only ONE post!! I look forward to reading the blog everyday so this is a little uninspiring.

Do you think substituting peanut butter for almond is still super healthy? I am a poor student and can’t afford that luxury! You should also think of doing a student post. Like yummy cheap things like this :)
