Eating For Health with How You Glow: Week Two

This week, we are making Ashwaganda Yogurt Rice Cake!

Ashwagandha, also known as Indian Ginseng, has a wide range of health benefits, including its ability to fight against cancer and diabetes, as well as reduce inflammation, arthritis, asthma, hypertension, stress, and rheumatism. Furthermore, it boosts your supply of antioxidants and regulates the immune system.

This recipe makes for a wonderful and filling gut-friendly snack that is easy to whip up. The beet sauerkraut will load you up with essential probiotics, the rice cake adds a nice crunch, and the yogurt-laden ashwanganda fills you up with tons of healthy benefits. Next time you want a light lunch or filling snack, this should be your go-to.

Ashwaganda Yogurt Rice Cake

Ingredients:
1 rice cake
2.5 tablespoons yogurt
1 tablespoon ashwaganda
1.5 tablespoons beet sauerkraut
1 hard boiled egg, sliced
sesame seeds
1. Place yogurt and ashwaganda powder into a bowl, and mix well to incorporate.

2. Spread the yogurt onto a rice cake.

3. Top yogurt with beet sauerkraut, sliced egg, and sesame seeds.

I definitely have to try ashwaganda! I’ve heard many lovely things about it and its health benefits. Also, Jessie and Tara are both stunners–I have to check out their blog and Instagram for more!

What would be a good vegan alternative to the yoghurt? The eggs could probably be easily swapped out for avocado slices. The casein in yoghurt makes me bloat horribly, so do eggs.

Eiliadei – You could try using coconut or almond milk yogurt, or even tahini or hummus?
