Make: A Healthy 4th of July Salad Recipe For Any Gathering

There was a time, many, mannnnnnny years ago, when my ideal 4th of July dish would have included store-bought pound cake, frozen berries, and whipped topping (c’mon, you know the kind of cake I’m talking about). The berries were about the only virtuous thing about that dessert, and thankfully, as my outlook and approach to food has evolved, so too have my barbecue contributions. Gone are the store-bought offerings, synthetic “toppings”, and too-heavy cakes! They’ve all been replaced with the best of what summer has to offer: fresh berries, crisp produce, and healthy, real toppings like nuts, seeds, and dried fruit. In hues of red, white and blue, a salad full of summer’s abundance is the perfect way to celebrate our independence while taking a stand towards our own health and happiness. Healthy Red, White & Blue Salad

Serves a crowd

Ingredients:

1 package strawberries, de-stemmed and sliced

1 cup blueberries

1/2 medium jicama, peeled and sliced into sticks

1/2 avocado, cut into chunks

4 loose cups arugula

1/4 cup sliced almonds

Goat cheese, crumbled (optional, omit to make vegan)

Place the arugula in a large salad bowl and add sliced strawberries, blueberries, sliced jicama, and avocado and toss to combine. Top with almonds and goat cheese and serve with lime wedges. Enjoy!
