Feel Good with Sophia Roe: Anima Mundi’s Adriana Ayales Makes A Mean — And Clean — Mocktail

Sophia Roe is a chef, wellness advocate, and food & feelings enthusiast, whose work centers around making the language of wellness more diverse, more inclusive, and more accepting. Her “Feel Good” series speaks the breadth of this language and, what better way to continue the wellness conversation than with Adriana Ayales, herbalist and founder of Brooklyn-based apothecary Anima Mundi.

PINEAPPLE GINGER BEER MOCKTAIL

The benefits of curating a personal ingestible herbal ritual can be seemingly endless: stress management, better sleep, enhanced mental focus, to name a few. So it’s no wonder that many of us are constantly exploring ways to integrate herbal formulas and protocols into our daily routines. While it’s super simple to take herbals and adaptogenic herbs on their own, Sophia often challenges herself to incorporate them into favorite recipes. This Pineapple Ginger Beer Mocktail is one of Sophia’s staples. And the addition of Anima Mundi’s Spirit Elixir seemed like a no-brainer, heightening the vibes of this recipe x 1,000, and making it taste DELICIOUS!

Ingredients

1 oz pineapple puree

1 orange, juiced

½ lime, juiced

1 oz Fever Tree Brand ginger beer (or other high quality brand)

1-2 tsp Anima Mundi Euphoria Spirit Elixir

1 tbsp Goji berries

1/2 tsp hibiscus leaves 

2 pieces candied ginger

1-2 orange slices

Optional: toothpicks

Method

To make pineapple puree, mix one or two cups of frozen pineapple with ½ cup of water in high-powered blender. Mixture should be thick — no need to strain. Store pineapple puree in the refrigerator for up to one week.

To make cocktail: Place ice in a tumbler or Collins glass. Add 1 oz pineapple puree, juice of one orange, juice of half a lime, and 1-2 oz of Anima Mundi Spirit Elixir. Stir mixture for 10-15 seconds. Top drink off with ginger beer. For garnish, lace a toothpick with a slice of orange, and 2 pieces of candied ginger.

To finish cocktail, top with Goji berries, hibiscus leaves, and threaded orange and candied ginger toothpick. This recipe makes one mocktail, so simply multiply the ingredients for more servings.

**Note — You could also replace ginger beer with your favorite soda water.
