Higher Learning with LAKA: A Simple Summer Salad Recipe

Or, as LAKA Living calls it, “The Future of Salad Is Female…”

We’re continuing our wellness series with LAKA with a simple yet delicious salad recipe. Though the concept of a summer salad is hardly new, what better way to up your game than with vitamin-C infused tahini and medicinal mushrooms, the latter providing a potent source of antioxidants and amino acids, while oxygenating cells to support mental and physical balance. 

The Future of Salad Is Female

Serves 3

Ingredients:

1 head of lettuce, torn

6 cups dark leafy greens  (we used spinach and kale)

3 cups arugula

1 cup microgreens

1 whole avocado, cubed

1 large beet, peeled + shredded

1 large cucumber, peeled + seeded + cubed

1/2 cup chopped macadamia nuts, pan toasted

6 tbsp Super Shroom Drip

Handful of mint (de-stemmed)

 

For Lemon-Ginger Dressing:

Juice of one lemon

1 inch knob ginger

3 tbsp apple cider vinegar

½ cup olive oil

6 tbsp tahini C

2 tbsp raw, local honey (optional)

¼ tsp sea salt

Water to desired consistency

Method:

Massage dark leafy greens in 2-3 tbsp olive oil and a little bit of pink salt. Let sit for a few minutes. Toss with arugula, mint and lettuce. Add avocado cubes, beet shreds and cucumber. Top with toasted macadamia nuts.

Add ¼- ½ cup of lemon-ginger dressing and toss to combine all ingredients well. Lastly, Shroom Drip your servings, top with microgreens, and dig in like you mean it.
