A Costa Rican-inspired smoothie recipe – it might just be your new favorite treat.
Nearly every morning in Costa Rica began with fresh juice or a smoothie. It seemed logical enough, drinking the lush and tropical environment surrounding us – fresh fruit stands stood everywhere. Passion fruits, coconuts, mangos, bananas…even the spread of color alone was enough to please the senses.
Often, the juice bars sprinkled through town offered up a list of ingredients which with I could create my own concoctions. I soon learned that mango, papaya, pineapple, banana and coconut milk proved my favorite blend — thank you, Robin’s Cafe in Nosara. Hands down, the best smoothie I’ve ever had. The thing that made it so good? Its flavor and creaminess. In my past attempts, I always added ice, but now I know the secret: Frozen Fruit. Always.
Frozen fruit, in lieu of ice, makes smoothies thicker, creamier and more delicious, i.e. a healthy milkshake. Here’s how to make one of my favorites:
Ingredients:
1/2 cup frozen mango
1/2 cup frozen banana
1/2 cup seeded and diced frozen papaya
1/4 cup frozen pineapple
3/4 cup coconut milk
Combine all ingredients into a blender and puree until smooth. Feel free to add more coconut milk if you please — this can make it extra sweet!
Pour into a tall glass and enjoy!
