i made a pumpkin pie the other day, to ease into the knowing that autumn is slowly on its way.
i didn’t write the recipe out anywhere, but i’ll type it out for you, in case you want to make…
filling:
1 can pumpkin (i used organic whole pumpkin, but you can use whatever you like)
2 eggs, slightly beaten
1 14 oz can sweetened condensed milk
3/4 tsp ground cinnamon
1/2 tsp nutmeg
1/4 tsp ginger
1/4 tsp ground cloves
1/2 tsp sea salt
* and if you’re so inclined, 4 oz of cream cheese!
mix pumpkin and spices together. add remaining
ingredients. mix slowly but thoroughly. pour into 9″
pie shell. bake at 375 degrees for about 50 min.
let cool for a smidge, then dig in. :)
I’m thinking about making this but I’m wondering if it’s really sweet. If so, I suppose I could go lightly on the sweetened condensed milk. What do you think?
yes, it is pretty sweet…you could even use just 1/2 a can, I bet…

I wanted to make some pumpkin muffins yesterday and apparently the stores are out of pumpkin pie filling?! Something about pumpkins going bad… Either way autumn is NOT coming fast enough for me! That pie looks delicious by the way!
