Just made this.. It's delicious! I had to use a little more of the coconut milk to reach the right consistency but it got nice and creamy in the end. Finished it with a sprinkle of coconut flakes. Yummy!

Post image for Gluten-Free & Vegan Mac ‘N’ Cheese Recipe

Update: This post originally ran August 21, 2013, but as the weather cools down we’ve been craving something warm. This is the perfect recipe for fall!

I recently made some major changes to my diet – giving up wheat, dairy, and refined sugar – in an effort to heal digestive and skin ailments that have been affecting me for quite some time. When deciding on a meal plan for the first week, I was suddenly reminded of this amazing ingredient I had read about: nutritional yeast. Read more »

My mother, sister, and I went vegan this summer, but I've been craving macaroni and cheese lately. I made this for dinner yesterday--everyone loved it! Thanks for writing, Brigette, and good luck with your pursuit of health!

I'm writing about a typo on the recipe. The tomatoes depicted are cherry or grape tomatoes, not roma tomatoes. Roma tomatoes are much bigger.

Just made these, they are delicious. Substitutions/additions: Pamela's gluten-free baking mix for the almond flour, cut the spices and added some ground ginger, cut the baking soda by 1/2 ----and they're spot on. They only took 12 minutes to bake. Just the right sweetness and nice texture.

Question on the apple cobbler in a jar. Can this be done in a slightly larger jar like you said you used and leave a little "air" room at the top and fitted with a lid for saving til later? How long will this stay fresh if sealed and stored? I would love to put these for sale in my bakery, if I could figure out the shelf life on them. Thank you for sharing.

ohgoodgolly this looks superdelicious! I love figs in any form but I do have a weakness for Sicilian fig filled cookies like my grandma used to make (but veganized). And vegan fig pop tarts. :) Thanks for the recipe!
